I can still remember the first time I tasted burrata cheese here in France. Previously, it simply looked like gourmet mozzarella cheese, all until I experienced it on a pizza. It happened when I took my daughter out for some mommy-daughter time to a pizza place. We decided to split a gourmet pizza to which there was arugula on top of the cheese along with the big creamy ball of burrata in the center.     SALAD INGREDIENTS

    2 handfuls of arugala

    1 ball of burrata cheese

    1/4 cucumber cut in quaters

    10-12 cherry tomatoes sliced longways

    1/4 red onion finely sliced

    1/2 handful of chopped fresh basil

    1 tablespoon of pumpkin seeds

    VINAIGRETTE

    2 tablespoons of balsamic vinegar

    6 tablespoons of olive oil

    splash of lemon juice

    1/2 teaspoon of mustard

    salt and pepper

    Instructions

    Salad Prep

    1. Prepare all the ingredients under “salad ingredients.”

    2. Place the arugala on a large plate.

    3. Place the burrata in the center.

    4. Sprinkle the remaining “salad” ingredients on top.

    Vinaigarette Prep

    5. Mix all of the vinaigrette ingredients together in a jar or bowl.

    6. Slowly pour over the salad and disperse evenly.
