Ingredients
SALAD INGREDIENTS
2 handfuls of arugala
1 ball of burrata cheese
1/4 cucumber cut in quaters
10-12 cherry tomatoes sliced longways
1/4 red onion finely sliced
1/2 handful of chopped fresh basil
1 tablespoon of pumpkin seeds
VINAIGRETTE
2 tablespoons of balsamic vinegar
6 tablespoons of olive oil
splash of lemon juice
1/2 teaspoon of mustard
salt and pepper
Instructions
Salad Prep
1. Prepare all the ingredients under “salad ingredients.”
2. Place the arugala on a large plate.
3. Place the burrata in the center.
4. Sprinkle the remaining “salad” ingredients on top.
Vinaigarette Prep
5. Mix all of the vinaigrette ingredients together in a jar or bowl.
6. Slowly pour over the salad and disperse evenly.

Notes
· Serve the burrata : take out the burrata cheese out of the frig 30 mins before serving. This ensures the creamiest texture and best flavor before serving.
· Serve fresh and immediately: Fresh ingredients are best served fresh to insure no wilting or sogginess. The arugula salad dressing can be prepared ahead of time.
· Ripe Tomatoes: Us ripe and firm tomatoes to maximize the sweetness and freshness.
