A simple French recipe of sautéed garlic butter green beans wrapped in prosciutto using green bean bundles for a beautiful low carb, keto friendly side dish.

Ingredients

Units Scale
400 grams frozen or fresh green beans (or enough for 6 small bundles for 6 people) 6 slices of prosciutto 3-4 tablespoons of butter 4 cloves of chopped garlic salt and pepper for seasoning

Instructions

  1. Steam the green beans for ten minutes (longer if they are frozen) until they are HALF-cooked. After, remove from heat and keep the lid off.
  2. Sauté the garlic in butter for 5 minutes in a large fry pan.
  3. Add the green beans, salt and pepper into the fry pan and gently mix the beans into the garlic butter. Cover the beans with a lid.
  4. If the green beans start getting dry, turn the heat down and add a little more butter.
  5. The beans are finished cooking when they are still a nice brighter green color. Do not over-cook the green beans.
  6. When the green beans are cooked, divide them into six portions.
  7. Lay down a piece of prosciutto and place the green beans in a straight bundle in the middle. Wrap the meat around the green beans giving the meat a little twist with the end pieces creating a bow-like appearance.
  8. Serve as a side dish with your favorite meal! Bon Appétit!

This dish refrigerates well for 4-5 days or it can be stored in the freezer for up to 3 month.
